Kansas City barbecue rub

My friend, DrumMajor, sent me this bottle of barbecue rub (among other things). I used it on chicken breasts last night. Delicious!

Here’s the recipe:

Preheat the oven to 375 degrees F.

Spray a baking pan with oil and lay chicken breasts on it.

Sprinkle the top of the breasts with the barbecue rub (which contains salt, sugar, and chili pepper).

Smear a tablespoon of mayonnaise on top of the rub.

Sprinkle a little paprika on top of the mayo.

Bake for 25 minutes, uncovered.

So juicy and tender! Due to popular demand, I am going to make this again for tonight’s dinner. Mahalo, DrumMajor!

    Glad it worked out, Gigi! Think I still prefer Hawaii’s kalua pork at a luau vs. Kansas City’s wonderful assortment of barbeque joints. Cheers, DrumMajor
