Super Easy Artichoke Chicken

3 or 4 boneless, skinless chicken breasts

6 oz. jar of marinated artichoke hearts

8 oz. tub (or less) of sour cream


Spray a ceramic container with oil.

Place chicken breasts in it.

Pour jar of marinated artichoke hearts over the breasts.  Arrange hearts over breasts.

Smear a thin layer of sour cream over all.

Sprinkle paprika over all.

Cover container with lid.

Bake in a 375 degree oven for 30 minutes.

    I probably misread, but i am looking for the recipe for the ‘sauce” you mention above as one of the things you pour over the chicken breasts.

    Okay, i think you are referring to the oil in the marinated artichokes jar? Dianne

    Thanks Gigi, I’ll save this one to try. You may be interested in this one from The English Kitchen, also very yummy and simple. It uses mayonnaise and parmesan cheese

    Hello Gigi
    Do you think this would work in microwave or do you really need the ‘heat’ of the oven?
    It’s been So So hot this summer the oven hasn’t been on once – so far in 2013 we’ve had 24 days over 30c/86f and there is more forecast for the rest of this week. I don’t normally feel the heat but this summer has been yuk

    I do have to chuckle again, but here is another recipe using low fat chicken that we then turn into a high fat dish. That happens often. it seems.

    Sounds delicious. Still have not cooked chicken yet. Husband refuses to eat the breast part of poultry.
