Gigi’s No-Crust Quiche

This is my recipe for a no-crust quiche:

3 tablespoons butter

1 large onion, chopped

1 (10 oz) box of frozen chopped spinach, thawed and drained thoroughly through a sieve

Salt and pepper

1 (8 oz) package of shredded Monterey Jack cheese

6 eggs

1 cup of skim milk

3 tablespoons of Kraft grated Parmesan cheese

Preheat oven to 375 F.

Melt butter in a pot and then sautee onion until soft.  Add drained spinach and stir.

Add salt and pepper to taste.  Mix thoroughly.

Whisk in a separate bowl the eggs, skim milk and Parmesan cheese.

Spray 9×13 inch glass pan with oil.

Layer:  shredded cheese, onion-spinach mixture, and egg mixture.

Bake uncovered for 35 minutes.

Let it cool for 5 minutes and then cut into squares with a knife.  Use a spatula to move pieces to your dinner plate.  Eat and enjoy!
