Cauliflower Gnocchi

I recently discovered something new at the market. It is a frozen meal, called Cauliflower Gnocchi. It consists of dumplings, stuffed with cauliflower and potatoes. It is submerged in a sauce of basil pesto and parmesan cheese.

It takes only 4-1/2 minutes in the microwave and, then, you’ll have a fantastic lunch!

    I have actually made gnocchi in the past, but I haven’t even eaten gnocchi for a few years so it’s time to give it a try again. I think I’ll buy it from the store, however. There is an Italian deli in town where they make it right there, so that’s the place to get it. Thanks for reminding me of this treat!
