Hearty Mexican Casserole

I made this wonderful Mexican casserole last night.  Hubby, daughter, and I loved it.  You can find the recipe here:

I chose not to make the cornbread topping, but simply sprinkled shredded mozzarella and cheddar cheese on top of the casserole after it was cooked.  I didn’t broil the cheese, either.

Tip: To prevent flatulence, always rinse the black beans in a colander first.

You will love the aroma and flavor of this entrée.

    Black beans and corn, I love the mix. If you use lo-fat cheese you can even do one for WW.

      Actually, he didn’t say anything about it, and I didn’t ask. The pre-op nurse told me recovery would be in 4-6 weeks, whereas the surgeon’s medical assistant told me it would be in 2 weeks. The pre-op nurse told me that I might find it difficult to press on the gas pedal because of my surgery. What I discovered is that the seat belt hurts my navel when I strap it on. That is the chief problem as far as I am concerned.

    Just a thought Gigi:
    Place the horizontal part of the seatbelt across/below/under your abdomen, tucked above your thighs. Still keeps you protected without hurting the surgery.
    I can still hear my Dad telling women this, back in the days when seat belts were “optional.”
    Yep, still wear your seat belt.
