I got this recipe for ham and egg cups from Marion’s Kitchen via Christine’s blog. Here’s the link to the recipe:

This is my version of Marion’s recipe:
HAM AND EGG CUPS
SPRAY A MUFFIN PAN WITH OIL.
PLACE A SLICE OF HAM IN EACH CUP.
PLACE 1 TEASPOON OF SALSA ON TOP OF THE HAM.
CRACK 1 EGG IN EACH CUP.
SPRINKLE WITH CHOPPED GREEN ONIONS.
TOP WITH SHREDDED CHEDDAR CHEESE.
BAKE FOR 15 MINUTES AT 375F.
LET IT SET FOR 5 MINUTES BEFORE REMOVING FROM PAN WITH A KNIFE.

It was delicious and addictive. Wow, I couldn’t eat only one.

That was a nice change of pace. We are quarantined at home and feeling very confined. That was a nice dish to relieve the boredom. I just hope that by May 1 our lives will be back to normal.
